TUNA & MUSHROOM PASTA
A quick and easy midweek dinner perfect for busy families, plus its so affordable and delicious!

Ingredients
- 450 g Can Tuna in spring water
- 1 Large Onion
- 90 g Butter
- 90 g Mushrooms
- 300 mls Cream
- 2 T Tomato Paste
- 400 g Spiral Pasta
- Salt & Pepper
- Chopped Parsley
Instructions

Fill a large pot of water and bring to the boil

While the water is heating up, finely dice the onions, chop the parsley and slice the mushrooms
-
Melt the butter in a large pan and add the onion, stir until the onion is tender and translucent

Once the water is at boiling point add a large pinch of salt, then add the pasta and cook until al dente

Add the drained tuna, stir and then add the sliced mushrooms
-
Stir in cream, tomato paste, seasoning and bring the sauce to the boil

Remove from heat and add to the top of the strained pasta then sprinkle with parsley
