This Chewy Cranberry and Chocolate slice recipe is a adapted by a friends recipe she gave to me after popping over for morning tea and I almost demolished the whole thing!
This slice is deliciously chewy and very moorish.
I love the ping of tart sweet cranberries paired with the firm chocolate chips.
This slice always gets demolished quickly in our home and I would recommend doubling it!
It’s a quick and easy slice to make for friends popping over for coffee or to put in lunchboxes!
CHEWY CRANBERRY + CHOCOLATE SLICE

Ingredients
- 1 cup plain flour
- 1 teaspoon baking powder
- 1 cup whole rolled oats
- ⅔ cup desiccated coconut
- ⅔ cup brown sugar or substitute for coconut sugar
- ⅔ cups dried cranberries
- ½ cup chocolate chips
- 125 grams butter melted
- 1 egg
Instructions

Preheat oven to 180℃

Spray a 15cm x 27cm baking tin with cooking spray (I use a Tupperware silicone slice dish).

Melt the butter and allow to cool while preparing the rest of the ingredients.

Sift the flour and baking powder into a large bowl. Add the rolled oats, coconut, sugar, cranberries and chocolate, and stir to combine.

Make a well in the centre of the bowl, add in the melted butter and egg.

Stir until combined, then place into the prepared baking dish smooth the slice surface over evenly.

Bake for 20 minutes or until golden brown.

Remove from the oven and leave to cool on a wire rack.

Cut into pieces and serve.
