I’m always on the hunt for something to bake for the kids lunch boxes that they love and especially if its lasts longer than two days!! These bars can be stored in airtight container in the fridge for up to two weeks!
This recipe is actually my Mum’s, she often made these when we were kids.
I have fond memories of how delish these muesli bars were and how much better they were than store bought ones!
I have actually adapted this recipe a bit to make it slightly healthier
Healthy homemade muesli bars perfect for school lunches!
- 1 cup Rolled oats
- 1 cup Rice bubbles
- 4 Crushed weetbix
- 1 cup desiccated coconut
- 1/4 cup dried otago apricots chopped
- 1/4 cup dried cranberries
- 1/4 cup sunflower seeds
Ingredients to Melt
- 3/4 cup Coconut Sugar or Brown sugar
- 1/2 cup Honey
- 1/2 cup Natural Peanut Butter
- 125 grams Butter
Mix together the dried ingredients in a large bowl.
Melt and simmer the remaining ingredients until it forms like caramel.
Mix dry and wet ingredients together, place in greased baking dish and set in fridge.
Once set cut into squares or long bars.
