I have to admit my inner child has always wanted to try Chocolate Chip Pancakes and once made these I was rather impressed! These are tasty, light, fluffy and so easy to make! I love them served with bananas!
CHOCOLATE CHIP PANCAKES
- 2 cups milk
- 1 lemon squeezed or 1 tablespoon of white vinegar added into the milk to make buttermilk
- 2 ½ cups plain flour
- ¼ cup white sugar
- 1 tablespoon baking powder
- ½ cup chocolate chips
- Pinch salt
- 2 eggs
- 50 grams butter melted
Add lemon juice/vinegar into the milk, leave aside to curdle (turn to buttermilk) while preparing the remaining ingredients.
Sift dry ingredients except chocolate chips into a large bowl.
Stir through chocolate chips and make a well in the centre of the bowl.
Add in 2 eggs, melted butter and buttermilk mixture.
Whisk the wet ingredients into the dry until smooth, being careful not to over mix.
Heat a pan on low-medium heat with a knob of butter.
Pour the pancake mixture into the fry pan (keeping you quantities consistent), flip the pancake once it starts bubbling.
Keep the non-stick fry pan heat low for golden pancakes.
Once cooked, place on a plate with a clean tea towel covering the pancakes to keep them warm.
Serve with banana and blueberries.
