These chocolate chew cookies are the ultimate indulgent chocolate cookies, they are flourless, sweet, a little crispy but gooey and chewy in the centre!
Chocolate Chew Cookies
- 3 cups icing sugar
- 2/3 cup Dutch processed cocoa powder
- 1/2 teaspoon salt
- 3 large egg whites unbeaten
- 1 teaspoon vanilla extract
- 1 1/2 cups chocolate chips
Line two baking trays with baking paper.
In a bowl of a cake mixture, using the paddle attachment gently mix together icing sugar, salt, and cocoa powder.
Add in egg whites and vanilla extract until the batter is completely moistened. It will be very thick and tough.
Stir in the chocolate chips.
Spoon the cookie batter on the lined baking trays, about 1 tablespoon per scoop. You will end up with about 12 mounds per sheet.
Let the cookie sheets rest in the fridge for 30 minutes before baking.
While the dough is resting preheat the oven to 180ºc.
Bake for 10-12 minutes until the tops are glossy and slightly cracked. The edges will be set and the middle slightly undercooked.
Let the cookies cool on the baking trays for 10 minutes before gently transferring them to a cooling rack to finish cooling.
Letting the cookies rest on the baking trays for 3o minutes in the fridge before cooking to stop the cookie dough from spreading.
