My new favourite breakfast – Breakfast Burrito all wrapped up in a delicious package!
My idea of a perfect little savory breakfast parcel!
- 20 grams Butter
- 1 tortilla wrap
- 1 rasher streaky bacon
- 1 small potato
- A sprinkling of Pepper & Me Man rub
- ¼ cup tasty cheese grated
- 1 free-range egg
- Pepper & Me Chipotle + lime salt
- 1 slice Red onion
- Avocado optional
Scrub and grate the potato.
In a fry pan cook the bacon on both sides until crispy.
On a dinner plate, butter one side of the wrap.
Remove the bacon from the pan once ready and drain onto a paper towel.
Add the grated potato to the fry pan making sure you spread it in the pan to the same size of the wrap to help it cook evenly. Press the potato down and sprinkle it with man rub and salt.
Once cooked remove from the pan.
In a small bowl whisk the egg with a fork, add to the pan and scramble.
Break the bacon in half, layer in the centre of the wrap on the buttered side.
Add the hash brown on top then sprinkle on the cheese.
Top the egg over the cheese.
Finish the wrap off with some red onion and avocado (if using) over the egg.
Fold the wrap like a pocket and add back to the fry pan with the remaining butter, carefully flipping over until golden.
Remove and serve with your favourite sauce!
